best ever oatmeal chocolate chip cookies

I've had some requests for my cookie recipe... so here you go! I make these ALL the time. They are delicious as dough, as cookies, but especially as pizookies...


Best Ever Oatmeal Chocolate Chip Cookies 

Preheat oven to 350 degrees

3/4 c brown sugar
3/4 c white sugar
1/2 c butter (room temperature - NOT melted!)
1/2 c crisco (can use butter, but cookies will be different texture)
2 eggs
1.5 tsp vanilla
1 (3.4 oz) package vanilla instant pudding mix (can also use chocolate or any other flavor if you want to be adventurous)
1/2 tsp salt
1 Tbsp baking soda
1.5 c oatmeal
2.5 c flour
mini milk chocolate chips (or butterscotch or white chocolate chips... or whatever sounds good to you!)

Beat together butter, crisco, and sugars until light and fluffy. Add eggs and beat again until light and fluffy. Beat in vanilla and salt. Add pudding mix and stir well. 

Beat in oatmeal. In a small bowl combine baking soda and 1 c flour. Blend into the egg mixture. Add the remaining flour 1/2 c at a time until dough reaches desired consistency.**

Stir in chocolate chips.

Drop spoonfuls of dough on cookie sheet. Bake for 9-11 minutes. Cookies should just have golden tint on the top when you remove them from the oven. They may look under-baked, but they are NOT. Do not over-bake - this will make them less delicious! Let them sit on the cookie sheet for a few minutes to finish and then move to cooling rack. 

**I like my cookies fluffy and soft so I add the full 2.5 c. The dough ends up being very thick and not sticky at all... almost like sugar cookie dough consistency.
